Pickled beetroot - pre-cooked beetroot. Advise please.

That's it really. I bought the beetroots pre-cooked - do I just slice them and cover them with pickling vinegar? Sounds painless :)

Mmm, I'm not sure that'll give you the result you want. When I've pickled stuff before, you need to make a pickling sauce which is a mixture of vinegar, sugar and spices and heat it to dissolve the sugar. If you just use vinegar it'll be too sharp. The jar and lid need to be sterilised, too.

Thanks flatpack (great name by the way!). I am using pickling spice which is softer than vinegar so hope it will be fine. I think it's what I used last year. Have sterilised the jars and lids so fingers crossed. Not sure why I absent mindedly bought pre-cooked beets but hopefully they'll be fine :)
