What would you put in a rice salad?

Need to make one for a buffet, and dont want to make something really bland with just a few pieces of pepper and sweetcorn floating around in plain rice.

Can anyone tell me how to do a nic (veggie) rice salad?

Why not a cold Asian style noodle salad??
Dead easy and it is wolfed in my house when am catering en masse.

Boil up those very fine noodles,then when drained,leave in cold water until the last minute (stops them clumping togethr).
Add ribbons of cucumber,carrot and baby corn as well as spring onion and coriander.
Toss the lot in a dressing made of lime juice,sesame oil,fish sauce,brown sugar and frsh chillies.
Leave to macerate for a couple of hours and finish off with a good handful of crushed peanuts.

They will be swooning.

I love rice salad (well mine). Mainly because it has mountains of garlic in it and a sesame oil and ginger and rice vinegar dressing.

No breathing on anyone for about a week after

ah moondog its not sick - your forget that the average english-person (especially up north) will accept anything cold if its served at a .... buffet, especially after a bit of a family 'do'!

moondog you have so many much more sophisticated suggestions. hmmm [ponders] may have practice-run with the noodle thing.

omg talked out of both rice and pasta salad - what will the in-laws make of this fancy fodder?! you'll be telling me next not to bother with the cubes of cheese and pineapple on cocktail sticks Grin

God I love rice salad. Have a wonderful orangey / nutty dressing recipe somewhere, would you like it?

The texture of rice is just so much nicer when it's cold - a bit, erm, chewy, mmmm :)

I know the kind of people you mean. There are many in my own family (my mother is a Staffordshire girl.) One astoundingly bad Christening buffet in K.......y cricket and social club in 2005 will stay with me forever.

(Btw,cheese and pineapple is fine as long as you say it is retro chic...)

Our family 'dos' are always fune Wink My SIL did the buffet for her dds weddings and it was the usual boring rubbish except they all say on one table with seafood etc... leaving us feeling like the poor relations!

You don't even notice the rice in it that much, it just adds more texture. I'm surprised at all the people saying rice salad is nasty.

Sorry for delay:

Nutty rice salad with citrus dressing (from a Linda Mc C recipe)

6 oz rice and wild rice
4 oz toasted hazelnuts, chopped coarsely
6 sun-dried tomatoes, cut into strips
Juice of 1/2 medium orange
juice 1/2 lemon
vinaigrette (made with 1 to 2 tsp dijon mustard, 2 tbsp fresh lemon or lime juice or vinegar, 6 tbsp olive oil, crushed garlic to taste, salt and black pepper to taste)

Cook rice. Mix hazelnuts with sun-dried tomatoes, orange and lemon juice. Stir into cooked rice and toss with sufficient vinaigrette to moisten.

I dislike rice salad so much it has taken me a few days to even look at this thread!!!
But do like kedgeree and make it often but use brown rice, peppered mackrel, spring onions, eggs and cherry toms.
Also often make puy lentils, brown rice with roasted mediteranian veg and fennel.
So i guess i do like rice salad just the thought of a traditional northern buffet ewith cold rice and peas makes me cringe!!
I am a northener so not being rude!!
What about cous cous salad, or tabbouli with bulgar wheat.

I find cous cous kinda flavourless and horrid in texture, bulgar wheat is nicer I think

but as you well know everyone will in fact be expecting ...... some cold congealed egg and bacon flan (quiche loraine I think you call it down south!) and thick thick pastry Grin
