Soft cookie recipe

Can anyone help?

I'm looking for a soft cookie recipe (similar to the tesco finest cookies!) I found one on yahoo which "guaranteed" to be soft but as soon as they cooled they were hard, any tried and tested recipes?

Nigella's choc chip ones are fabulous

and you do need to hold your nerve and take them out quite soon....they don't seem to be done, it's like brownies if you think they are cooked they are over done.!

I read somewhere that the secret is using oil rather than butter, I haven't tried it though.
