I've got a lovely chilli ready for tonights dinner and being a greedy pig good chef, i've tasted it and it's fab - but i did this straight after eating a square of green and blacks Grin

i know some people do stir choc into chilli, but how much?

for a generous portion for DH and I shall i grudgingly put in 1-2 squares or less/more?

i put chocolate in chilli but just a tiny amount.. if its a big pot then one square should be enough.. and dark chocolate works best!

try 1 and add another if you think it needs it. I use the Willies 100% cacao chocolate for this purpose - too dark to eat and keeps for month and months. Use about 1 tsppn of that

It needs a fair sugar whack I find, so if it's ultra-dark I'd say 6 cubes. How precise. Taste it and see what you think, really! It needs to be fairly hot, in order to take a sugar addition of that much.

When I do mine which is based around 500g mince and has about 1tsp cayenne and 2tsp paprika, I add about 1-1.5 tbsp of treacle. That is my 'secret' ingredient and I prefer it to straight sugar and chocolate...

this is 70% dark so should be ok shouldn't it?

never thought about using cocoa powder...

ah treacle.. never even considered that! must remember to give that a try next time! Yeah i'm sure 70% will be fine.. just add a little & taste!

I use a tablespoon of cocoa powder for a pot big enough for 4.
