Custard for strawberry tart

I have some sweet shortcrust pastry in the fridge.
Dh wants strawberry tarts but doesn't like cream.Shock

What sort of custard do I make for the inside of it?

Best bet would be a creme patissiere. The following Richard Bertinet recipe is rather good (should do as a base for up to 24 x 8cm tarts). It doesn't take as long as it reads either. Smile

Ingredients:
250ml full cream milk
1 vanilla pod
3 egg yolks
60g caster sugar
25g plain flour

Method:
Put the milk into a heavy-based saucepan. Using a sharp knife, split the vanilla pod along its length, scrape the seeds into the milk, then put the halved pods in too.
Put the egg yolks an sugar into a bowl and whisk until pale and creamy. Add the flour and mix until smooth.
Put the pan of milk over a medium heat, bring to just under the boil, then slowly pour half of it into the egg mixture, whisking well as you do so Add the remainder of the milk and whisk again, then pour the mixture pack into the pan. Bring to the boil, whisking all the time, then keep boiling and whisking continuously for 1 minute. Take off the heat.
Pour the mixture into a clean bowl and scoop out the vanilla pods (they can be washed, dried and used for vanilla sugar). Cover the surface of the bowl with greaseproof paper straight away to prevent a skin forming. Allow to cool, then store in the fridge until you're ready to use it
