Hi, its my DD christening next month and I am going to attempt to make the cake! I've read that Maderia Cake is better than sponge. Can anyone give me a recipe for a 12" round Maderia Cake? With gas oven temp and times?

Make a Victoria Sponge with a result that's like Madeira Cake.

Weigh three eggs in their shells together and use the same weight of flour, sugar and margarine. Bit of flavouring essence if desired and perhaps a spot of milk to moisten a bit more if you think it's necessary.

Beat sugar and fat together. Add flour and egg bit by bit with essence. If you think it's too stiff, add a bit of milk but not much.

Oven at 190 degs C for 40 mins (no more) and see if it gives but is firm when you touch the top. Don't know about gas regulo though.

For a 12 inch round cake, you would need double the ingredients above. Just line a tin with baking paper and scoop or pour the mixture in (depends how runny your it is but it's supposed to be 'firmish').
