Baking for school , any good fool proof recipes?

Need to take some home baking to school this week for a teachers leaving party. Any ideas what would be good to make?

I am thinking fruit loaf (but buttering it is a pain) or lemon/orange drizzle cake?

Anyone got a good quick easy favourite they'd like to share?

Think its for both kids and adults although mainly adults depending on many folk bring homebaking.

I think I will go for the victoria sponge as would only need to buy cream!

I have a recipe for apple & cinnamon cake which is v v easy and utterly lovely:

125g soft brown sugar plus 1tsp for sprinkling
250g self raising flour
50g butter, diced
3-4 apples peeled, cored & chopped (into about 1-2cm dice)
1 large egg, beaten
100ml milk
1tsp cinnamon plus extra for sprinkling (or mixed spice)
1tsp salt

sift the flour into a bowl and add the sugar, butter, apples, cinnamon & salt.

mix the egg and milk in a separate bowl then add to the flour mix. the mixture will be a bit wet.

pour into a greased 20cm cake tin, smooth top and sprinkle with sugar and cinnamon, then bake at Gas 4 for about 40 mins.

Is so delicious and always gets compliments. In fact, I am having some right now Grin
