roast chicken leftovers

Have over half a roast chicken left over. Breast and leg.

Any good ideas for a casserole? It's turned bitter here and I'd like something warming and hearty. Will be doing jacket spuds with it and rice for DD

How about cutting the remaining meat into chunks & adding to a simple white sauce containing chunky-cut ham and button mushrooms?

And a bit of leek in there would be nice.

Jamie does a really good chicken and leek pie using leftovers. Google it - it's delicious.

I went for a more Moroccan style dish in my tagine

Sautéed shallots, garlic and courgettes and tomato paste to make courgette provençal, and then added the shredded chicken and heated through very slowly. I served mine as it was and made DH a frittata with yesterdays leftover potatoes.
