Help me with dinner please

We were supposed to be having risotto but I only have paella rice.

If I have got - leeks, artichokes, asparagus, paella rice, various herbs and spices etc, could I make a veggie paella and how would I do that please? I've also got some carrots, frozen vege of various types and possibly an ancient red pepper.

Sorry, I've never made paella, could you just do the risotto with the paella rice?
It'd still taste fine I'd think.
Probably should tell you this, but we're having a curry feast, six dishes, plus rice, naan and a couple of salad/dips, and only one of the dishes had meat in it.
My friend is due from Aberdeen any minute, I've been cooking since Friday, am v excited as I haven't seen him since December. Grin

Seriously though - Have got paella into my head now, so not fancying risotto anymore! Have never made paella though - does it stick horribly?

I think it's supposed to have a crust of sorts on the bottom, but really can't help more than that.

It was lovely. This is what I did - not at all authentic but everybody gobbled it up!

Fry onion, garlic and leek until softish but not coloured.

Add paella rice, paprika, a handful of chopped herbs, saffron (that I'd soaked in hot water) and boiling water plus Marigold stock powder and red wine. Stick in oven for about half an hour, adding more water if it dries out.

I defrosted some broad beans and shelled them. I chopped some asparagus and some jarred artichokes. When rice nearly done, stick all vege on top with a handful of frozen peas and stick in oven again until warmed through. I didn't stir it at all, just served the rice with the vege piled on top and with more herbs plus lemon wedges.

Will deffo do it again.
