Afternoon Tea Angst

Two questions that are furrowing my brow:

How do I keep sandwiches fresh and avoid them drying out if they are made in advance? Freezing them not an option btw.

What else in addition to the usual finger sandwiches,scones and a selection of fancy cakes can I provide as there will be people attending who have quite large appetites and might like more?

Any help gratefully received.
