Sponge Cake/Sugardough query

I can make a plain Victoria Sponge easy enough but we usually eat it straight away. I am wondering whether I can make the sponge in advance for my daughters Birthday and then freeze it? (could I make it 2 weeks before)?

If she is having her party on the Saturday when should I decorate it? I am thinking of using roll out Sugardough and cutting some butterflies etc out of it and placing on top. Should I just put the whole thing in the fridge after that then?

I am sure at school (a long time ago) we frozen our Black Forest Gateaux's for a couple of weeks before decorating.

You can freeze sponge yes, just pop it in a Tupperware tub and freeze it, I wrap it in grease proof paper too just to protect it from the ice a bit. To thaw it out just take it out of the freezer and leave it in the tub, I usually do it overnight and it's ready for the next morning then. As for the sugardough (assuming thats like fondant) don't put the cake into the fridge once it's covered with that, the minute you take it out of the fridge it'll start to get wet as it goes from cold to warm, and looks awful. Cover the sponge in a smooth layer of buttercream before covering it with any icing and it'll make sure you get a smooth finish once the icing is on and also help it stick to the cake. Once it has thawed and is covered in the icing it'll probably be at its best for around 2-3 days, so decorate no earlier than Thursday if you can :)

Oh great thanks Froot, I wouldn't have thought about needing to put something between the cake and fondant stuff.

I will probably decorate on Friday then.

Fx it looks half decent for her Birthday Grin Very excited.
