Can someone provide foolproof instructions? I have a gazillion sweet potatoes to use up, and a BLW 9mo Smile

Cut into wedges, toss in a light coating of olive oil, bake in very hot oven for about 45 mins. Check and shuffle regularly. You don't need much oil, honestly, otherwise they end up oily and soggy.

If you're doing some for yourself you can add smoked paprika and sea salt.

I don't bother. I think it might make them soggy.

Cut into wedges, bake in foil for maybe twenty minutes or so then bung in the deep fat fryer! Terribly unhealthy but delicious. Serve with cheese, bacon and sour cream...yum!

I boil my cut up chunks first, then stick them in the oven.
