I bought an unfeasibly large bag of basics peppers, as it was cheaper than buying the two I needed loose.

can I slice and freeze the leftovers, or will they go all mushy?

I've done it. They went a little mushy but were fine in a tomato sauce for curry, or pasta, and in a stir fry :)

excellent. we mainly use them for veggie chilli, so a can tolerate a little softness.
