Oyster sauce

How long does it last for once opened?

The teeeny tiny bottle I normally buy says "chuck 10 days after opening" on the label.

Was looking at the "forrin foods" section of Tesco this evening. Where they sell brands from other countries. They have some fab stuff and I'd love to try more of it.

They were selling bottles of obscure brand oyster sauce which were huge. Wine bottle size? I think in the chinese / thai / malaysian brands shelves?

Do people from those places just get through a lot more Oyster sauce than I would or do they have a different approach to how long it lasts? Nothing on the label to say how long to keep it once opened.

I'm thinking to keep it in the fridge after opening, obv.

I used to have a chinese housemate and he had one of those bottles for years out of the fridge and it never did us any harm. They have similar recommendations on things like ketchup and I don't think anyone would think twice about keeping an open bottle bottle of that for extended periods of time. They put these recommendations on the bottle to cover their arses in case it does go bad and to encourage people to throw away perfectly good food and buy more.
