Can anyone post me in the right direction of a Banana Loaf/cake recipe not too many nuts.! I have a glut on my hands so need to get down to baking tomorrow.

What is the one you recieve compliment on as MIL will be tasting

Banana bread

Mash five large, ripe bananas (approx 450g/1lb peeled weight) in a bowl. Mix in 125g/4ozs sultanas, 150g/5ozs soft brown sugar and two beaten eggs (I usually reduce the amount of brown sugar a bit because it is very sweet).

Sift in 225g/8ozs self-raising flour and 1 tsp ground cinnamon (optional).

Spoon into a greased and lined 2lb loaf tin (I use a 2lb silicone mould and dont bother to grease or line it!) and place in a preheated oven at gas mark 4/180C (170C in a fan oven) for about 1 hour 15 minutes, till cooked through. Loosely cover with foil if it starts to brown too quickly. Leave till completely cool before slicing or, if time permits, leave for a day to allow the flavour to develop.

4oz butter
6oz caster sugar
2 lge eggs
6oz SR flour sifted
4 tbs milk
grated rind of a large lemon

Feck the whole lot in a bowl and beat the crap out of it , pour into a loaf tin and cook for 40/45 mins at gas 4 or 175o.
Leave it in the tin when you take it out of oven and mix the juice of the lemon with about 3/4 heaped tbs of icing sugar, stab the cake a few times with a skewer and pour the icing all over the hot cake. Grin

I made a nice chocolate banana loaf last time we had leftover bananas. That was yummy, but I can't remember where I found the recipe.

Delia has a great one that is technically a banana and walnut loaf, but I sub frozen blueberries in place of walnuts and it is lush.

This is is it, I think. Mine is in a very battered and splattered old book.

Or if you have the Hummingbird Bakery book, the banana cupcake recipe is lovely. Doesn't use as many bananas though - just one or two, whereas the Delia uses four.
