Easy fish recipe for dinner tomorrow evening

I want to cook a nice meal for my parents this evening, and am thinking that fish would be a good plan - DH and I don't eat meat and my dad might be disappointed with something veggie.

I am not an accomplished cook so need something easy that I can't mess up. DF won't eat pasta (my staple diet!) and DM won't eat prawns or shellfish of any sort. DD can't stand fish pie so that's not an option. Any suggestions?

Any easy dessert suggestions also welcome -especially light fruity ones!

Salmon baked in foil with lemon or coated in pesto, served with buttered new potatoes with mint and either broccoli or asparagus.

Salmon fillets - bake them in the oven, in foil. Grease the foil first (pref with butter or everything gets very oily) so the salmon doesn't stick, then put in a splash of white wine or lemon juice, a few sprigs of lemon thyme over the fish, and possibly some grapes (baked grapes are lush). Close the foil over the fish so that it's airtight, and bake in the oven for ~30mins at ~200deg C. One fillet per person.

So long as you make sure that the foil is closed properly, you can't really go wrong - the fish will remain nice and moist because it's effectively being steamed.

Dessert - pavlova. You can buy the meringue base, either one big or lots of small - whip as much or as little cream as you feel like and then cover with chopped fresh fruit.
