Clever puddings - really need quick help!

Biggish barbecue tomorrow - about 50. Main food sorted but my oven is being weird. My brownies went wrong for the first time ever so I think my oven isn't heating properly.

There'll be fruit salad and lemon meringue pie thanks to friends, I can run to a no-cook cheesecake and banoffee, but does anyone have any ideas for quick no oven needed yummy puddings? Something a bit different?

Thanks

I do an Eton Mess but make a coulis with about a third of the berries and stir it through just before putting the meringue bits in. Always goes down very well!

Great idea - bought meringue this time though for me! Pity as I've just got my Kitchenaid at last.

Thank you.

I was going to suggest eton mess too, but with alcohol - it's delicious! you can try port, sherry or brandy. yum!

I have cassis - normally chuck some of that in coulis anyway. Or brandy goes with everything.

I'm just so pleased we have sunshine - we normally have a summer party but have had vile weather for the last couple of years. It's later this year - before dd1 goes off to university - and it's not raining!!

recently had an eton mess made with mango, instead of berries. Heavenly!

Half puree, half chunks. Juice and zest of a couple of limes. Make mango/lime combo in advance, ditto whipped cream. Put everything together at the last minute.

Oh that sounds like a Solero!

Cheats choc cheese cake.
Melted butter and smushed up digestives or hazlenut cookies for the base.
Whip cream and add a tub of mascapone. Melt chocolate and mix into cream mix. Refridgerate. You can use savers choc and it still tastes good. As it's so rich a large one does loads of portions.

Might be a bit late now, but this is v. easy to make and tends not to have left-overs...

If making, you can use single, instead of double, cream.

goingmadinthecountry · 07/09/2012 22:37

THANK YOU ALL!

Will do all the above recipes either tomorrow or very soon.

Oops - just noticed you're already sorted on the lemon front. Blush

You may also want to consider one of the tablet recipes on this thread.

Enjoy tomorrow.

Shove some bananas on the bbq - still in the skin. You can also bbq fruit kebabs.
