Sausage casserole - what do I need?

I've got the sausages, and carrots, onions and other veg. But how do I turn it in to a casserole?

I know someone can help! Thanks

Fry the sausages in a big saucepan. Take out and add onions and garlic, soften for a bit then add chopped carrots. Return sausages and pour over some chopped tomatoes, or just stock. I lik eot put some sprigs of thyme and a bayleaf in but not essential. Cook for at least an hour. Really nice if towards the end you put in a tin of haricto beans, then just eat with crusty bread and salad.

fab sponge. We are not big cooked tom fans (raw fine - weird I know) so will stock be okay?

I always put a bit of Worcestershire Sauce in mine - gives it a lovely flavour.

Oh no just seen that the sausages went out of date yesterday (15th). Would you risk it? they have been at the bottoom of the fridge, at the very back. Nice and cold there. But dont want to risk poisoning everyone. Especially after the day I've had today.. What would you do?

i'd use them... they're gonna be cooked well.

also you could chuck a tin of baked beans in if you don't have plain haricot beans

SPARKLER1 · 16/03/2006 16:54

I always cheat and use the packet mixes. Grin

thanks for all the ideas. Will poss try to baked beans idea - sounds different ! But I'm not sure I'd want to mix with red wine - seems a waste of wine to me Wink

I put roughly sliced white cabbage in mine too. Goes in last (after sponge's tomatoes) with some water. Comes out yummy and squidgy.

Children haven't realised yet it's cabbage or that it's 'green' Wink

It's in the oven at the mo. Didn't have pan big enough, so did what you all suggested fried up the sausages, the onions/carrots etc then out in casserole with beans and stock. Smells nice we'll have to see how it goes. Would be nice with some creamy mash - except there has been a potato thief in this house :(

I grill the sausages. Then fry onions and mushrooms, add some flour to soak up juices, add lots of red wine and red currant jelly and some stock. Sometimes add tinned chestnuts at the end. Add sausages. Serve with creamy mash and braised red cabbage.

TinyGang · 16/03/2006 20:09

Deffo grill/fry the sausages first. I didn't once and they looked like a dish of limp willies.

NASWM · 16/03/2006 20:21
