The best roast chicken?

Hi, looking for ideas for the best roast chicken, golden crispy skin, soft, juicy meat... To stuff or not - traditional sage and onion (always had soggy results), sausage meat or lemon/herbs etc? Butter under the skin? Rub chicken with olive oil? All ideas very welcome! Thanks!

The Heston method. Brine overnight then cook at a very low temp for many hours. Need careful planning in terms of timing but surpringly easy and delicious!

I have never made the Jamie one, but it is a favourite of a friend's and I can say that it tastes very good!

I can third the Jamie method. You end up with a lovely lemony flavour, and the chicken remains very moist. It also helps if for the first half of the cooking you put it in breast down, then turn it over for the rest of the time. Keeps the breastmeat moist, and then you get the browned, crispy skin

best roast chicken is Jamie Olivers Empire Roast chicken & bombay roast potatoes - slightly spicy roast dinner!

I always make a garlic and thyme butter and spread it under the skin. Then I put more thyme, some smashed garlic cloves and an onion in the tray. Stuff half a lemon in the chicken. So tasty and the chicken is never dry. also makes for good roasties.

I slather put some butter on the skin then cover with foil for 2/3 of the cooking time, take the foil off for the last 1/3
