Unfatty Sunday Lunch

Have my brother and his family coming for a rare visit soon and am trying to think of something I can cook for Sunday lunch. I'm not a great one for cooking a roast to be honest and they have developed a fat phobia, so everything I think of doesn't seem to fit. Also we'll probably go out for the morning for a walk with the kids so need something that is either long and slow, or something fast and simple. Doing fish on the Sat night so was thinking chicken or pork perhaps?

Jambalaya is yummy and not too fatty. Can make ahead as well.

How strange, that was about the one thing I came up with that might be a good idea! What would you serve with it? Just a salad? Don't really know any creole sides.

An easy but tasty baked risotto? It has chicken/chorizo in and veg. One of my favourites!

Baked risotto, can't say I've ever made one baked. How long does it take in the oven?

I'd get a whole salmon and bake it in foil with some herbs. Doesn't take long at all and, despite being an oily fish, it's 'good fats' so perfect for those with mild orthorexia...
