Left-over roasted veg

I have shoved in the freezer for now. What shall I do with it though?

Depending what it is and how well it will defrost...a pasta sauce of some form?

courgettes
aubergines

I dont know if it will work but you could try

Grease a baking dish, whisk some eggs add a little bit of milk, pepper, salt etc put veg in dish add eggs and grated cheese. Mix up and bake slowly in the oven for about 25 minutes and you get a cross btween a pasteryless quiche and and a tortilla.

Maybe a pasta sauce is the one then really. shove it between some lasagne sheets?

roasted veg soup? mmmmm
just add a bit of veg stock, heat up and whizz with blender. roasted veg tastes lovely in soup

I always have leftovers with couscous, hot piled on top or cold with a little salad dressing mixed through!
