Any slow cooker recipes for vegetarians?

I have read so much about the wonders of a slow cooker and how time saving it is. Please can you help me compile enough vegetarian recipes to make buying one worth my while? I start full time work soon. We don't eat fish or chicken. But do eat eggs and milk products.

eggs and dairy are not great in a slow cooker

sauces for pasta and curry are great, as well as chilli and cassoulet

i don't follow many slow cooker recipes, i adapted family favourites that are one-pot specials and use the slow cooker for those

risotto is nice in slow cooker.

Baked potatoes are easy

this blog is excellent - for veges and carnivores also.

Do you eat Quorn? I don't generally like it but I use the slow cooker to make a nice filling for a shepherd's pie:

Stick the following in the slow cooker -
3 diced carrots
1 diced onion
2 diced celery sticks
1 or 2 diced leeks
some finely chopped parsley
a spoonful of Marmite
lots of black pepper
a glass of red wine
a packet of Quorn mince which you've defrosted
2 tablespoons gravy granules (I make no apology for these!)
A bit of boiling water

Cook it on low all day (check if it needs a bit more water). It may need another spoonful of gravy granules to thicken it.

Transfer to oven dish. Top with mashed potato and grated cheese and brown.

Chilli / lentil bolognaise work well too.

Hi, yes, we eat Quorn but to me that tastes like cardboard. We eat a lot of beans and lentils for the protein. Staples are rice, indian type breads, currys, chinese style food (stir fry, green curry) etc.

You can make curries, veggi stews etc. baked Potatoes are easy. You can use it as a bain marie and also to cook steamed puddings.

ANything that is normally a meat recipe such as chilli you can make with either quorn or the dried mince substitute.

Lentils and beans work really well in a slow cooker. If you are into indian cooking, have a look at the book Indian Slow Cooker. You can copy a few of the recipes from the Amazon look inside feature, so you can see if it's to your taste.
