I have a load of mushrooms left from another recipe, I want to use them up and was wondering if anyone had some ideas about the best way. I was hoping they could be the main part of the meal (so no meat) but other than that I am clueless.

Mushroom pasta - thinly slice them , fry some garlic, shallots and the mushrooms, lots of olive oil and parmesan, serve with tagliatelle or parpadelle

I am sure the bbc recipe is great, thanks ceeveebee, I would be inclined to make a mushroom-stroganoff-type-thingy.

Fry off some onions, then fry off some sliced mushrooms and fry off any other bits and pieces you could do with getting rid of in the fridge, especially peppers. Then mix in a couple of good spoons of philadelphia, a splash of white wine (or not) and add a couple of tea spoons of mustard. Serve with rice, pasta, baked potato......

My favourite is Mushroom Curry. Tomato based sauce flavoured with whole spices ... cumin, fenugreek seeds, mustard seeds, ginger, garlic,turmeric etc.... mushrooms simmered in this until tender. Right at the end once the heat is off add a good blob of plain yoghurt, a little garam masala and some freshly chopped coriander. Sprinkle with toasted almond flakes.
