Not the sort of rich heavy ones that you get at Christmas the sort of lighter, more spongelike ones like dundee cake (but without all the almonds).

Dh and I have a hankering for a fruit cake but not one that takes weeks of drenching with brandy!

Thanks Smile

Lovely, what's the tin size and cooking time/temp?

Aw sorry i thought i sent it but hadn't, 140/fan120/gas1, 9inch tin, grease tin, mix all the ingredients together thoroughly except almonds, beat 2-3mins until glossy and smooth, spoon into tin and smooth out sprinkle on almonds, cook for 3ish hrs, sounds alot i know but its a big cake, and i like big!!! leave to cool in the tinleaving the parchment on as it helps keep it nice and moist, store in foil. Enjoy! I also am an instruction follower, not a guesser, i make too many cakes for people to mess things up.
