fairy cake question

I need to make about 50 fairy cakes. My faithful recipe makes 12 at a time. Can I double up the ingredients so I can make 24 at a time or will I have to just make loads of single batches? Will doubling up mean the cakes won't rise properly?

Only double up if you have room for 24 in the oven at the same time. Its not a good idea to leave the mix sitting while one batch cooks.

think there should be room, so its ok to double up? Maybe I should put a dash of baking powder in the mix too? Would that help them to rise?

I have doubled up before and it worked fine.

Do you usually have problems with risibg though? You maybe need to beat more air into the sugar/butter before you add the flour etc.

Im sure someone will be along that knows more.

Nigellas fairycake recipe is good btw :)
