Lazy Pizza

I have some premade pizza bases. Instructions are, put toppings on, bake at 220C for 10 minutes.

I was planning to put tomato paste, cubetti di pancetta, and onion and garlic on. Do I need to pre-fry the pancetta, onion and garlic? Or will 10 minutes be long enough?

I'd sort of half fry them and then stick them on the pizza. They might be a bit strong otherwise. If you cook them through and then put them on, they'll be overcooked when pizza comes out of oven

Seriously, thanks. I will go and start chopping and frying a tiny bit. And rummaging through fridge to find out what else I can put on, too. Probably whole baby tomatoes. Maybe capers. Can't really put radish on, can I? (Oh no, I'm turning into my mom!)

Instead of just tomato paste I blend half a tube of tomato paste, a tin of tomatoes, clove of garlic, 1 onion and dried oragano. Then you have loads of flavour in the base topping. Easy as well no pre- cooking.

I never pre-fry the onion on my veggie pizzas and its fine. I mash the garlic in with some butter and put a few blobs on - helps the garlic cook and makes pizza nice and moist.

I reckon that if you slice the toppings thin enough then they should be ok. Reeeeealy thin though or you'll have mingin ingin breath for ages!

PS Ingin is the scots word for onion....
