Polenta recipes

Ds has 2 friends over, playing nicely (at being teenagers, listening to The Who!).

Just had a very satisfying 1/2 hour clearing out food cupboards and finding many things that need using up. Amongst them I found a bag of polenta - have no idea what to do with it that is quick! Any ideas? Have heard you can bake with it too.

You can make polenta cake (BBC Good Food site has the best orange polenta cake recipe ever), or add a handful to bread. Polenta cookies are nice too.

Usually I make it up in a pan then pop into a baking tray to cool down. Slice it up and griddle to serve with something creamy and juicy (so mushrooms in cream sauce) or a salad with lots of dressing.

I like the look of the orange and polenta - thanks. I have had a disaster trying to cook polenta in the past (hence a near full packet unused). Will definately do the cake and maybe experiment a bit with what is left over.

I made cornbread with it recently, which was great, have also tried it in a cake, Nigella's recipe and it was a disaster!

They usually have it next to the pasta (even Tesco has it). Maybe try a health store or if you have an italian deli near you.
