Ideas for dinner needed please!

Has any one got any recipes that would fit the criteria below please!

  • Include chicken and/or bacon
  • Must be reasonably quick. I have about an 60 - 90 mins to prepare and cook
  • Must not be curry
  • Must not be pasta
  • Must not include mushrooms
  • Must not include salad

I have most store cupboard staples, tinned toms, passata, stock cubes, rice, herbs, spices etc.

DH has a friend coming round to look at our roof tonight so I offered to cook dinner, not realising he was rather picky. He will only eat chicken and bacon, no pasta, no salad, no mushrooms, not spicy/curry... can anyone help!

Chicken wrapped in bacon with a cheese or a tomato sauce served with either rice or potatoes.

I would say to roast skin-on chicken breasts or thighs with goat's cheese/boursin and some basil stuffed under the skin. Serve with your starch and green veg of choice. (I'd do couscous and a green salad but you say he doesn't like salad so maybe sauteed courgettes?)

In fact the Barefoot Contessa has a recipe for that chicken, with sundried tomatoes instead of basil (but both would be lovely):

Chicken breast stiffed with mozarella and balsamic glaze, wrapped in Parma ham.
Serve with roast potatos and (for the salad eaters) rocket and tomatos.

Oohhh... some lovely ideas! Thanks. Have phoned DH to run a few past him, a lot of them I'll do for us. Apparently his friend doesn't eat hot/melted cheese, only cold/raw mild cheddar.

Have asked DH to check about cheese sauce, I'm going to do a potato bake with chicken and bacon and some sort of white/cheese sauce. I'll so some vegetables as well. A bit uninspiring but if it does the job!

I have been told that he does eat cheese sauce but only the packet ones, not the home made ones with real cheese in... Hmm

Thanks for the ideas, I'll use them myself I think. I'd love to know what this guy feeds himself on!

Chicken Marengo, leave out the mushrooms or fry them seperately and serve as a garnish to those who like them. Serve with rice, uses store cupboard stuff.

Risotto is a good idea too, or roast honey and mustard chicken with chips.

What time is dinner, loveulots?

How about a honey and mustard chicken (and bacon) bake with some new pots or wedge pots (depending on what pots you have around). So sort of bit of honey, bit of wholegrain mustard (and/or english mustard powder - espec if hes a bit fussy and might not like seeing wholegrains!). Bit of white wine to slosh and drizzle of olive oil. Chicken breasts in - chop up bacon or wrap around chicken (if you've got skin on chick I'd chop up bacon and have in bottom - but if no skin on chick I'd wrap it round chick to keep it moist). Half new pots (or cut normal pots into chunky ('rustic') wedges. Coat everything in the honey/mustard/white wine/oil. Bake for around 30min at 190C?

Or a sort of cheats coq au vin? Or chicken cacciatore (chicken and bacon in a tom sauce), served with sort of cheat sauteed pots (I just cube or cut into slices some normal pots, Olive oil, garlic cloves and bake for 25-30min).

Disassembled is the wrong word isn't it? Blush can't think of the right one.

Deconstructed? I always think of disassembled too (my DH always has to remind me, as he just did!)

You can do a sort of chicken parmigana with bacon instead of cheese - I do it and its good.

Dip chicken breasts in egg and then breadcrumbs with garlic and parsley added (I also add grated parmesan but I'm guessing he won't eat it). Wrap bacon around coated chicken and put in oven dish. Cover in a tomato sauce with basil. Bake in oven for around 30mins.

Serve with whatever veg he will eat (some kind of green beans maybe) and some nice bread.
