left over chicken

I have some left over chicken from one roasted yesterday and am not sure what i can do with it.

I was thinking of making it into a soup or something but i have hardly anything in the cupboards as very skint right now.

(i don't actually know how to make it into a soup)

Any more exciting ideas would be good too. Something the kids would eat would be good but its in quite small pieces to breadcrumb.

Pasta sauce? I had a little left the other day so made ds and I pasta - fry chopped onion and some sliced courgettes/peppers/mushrooms/other veg in fridge. Add chopped chicken. Add a little stock (or wine) just to cover base of pan then stir in some cream cheese (ds is 15 months. You could also add some milk and a dollop of yoghurt if you want it less cheesy than he likes it) v

I tend to make a risotto with leftover meats, rice, chicken stock and whatever other veg you can find.

Failing that quesadillas are also lovely with cooked chicken. And very quick too.

In quesadillas, tossed into salad, served ontop of fried rice, fajitas, sandwiches or with pesto pasta.

We make Chicken Fried Rice with leftovers and it's DS's favourite supper. Serves 2... Cook 3oz brown rice (white is OK but brown is tastier) and reserve. Heat a wok and stir fry some finely chopped spring onion, garlic and ginger quickly, then add some finely chopped veggies such as courgettes, peppers and mushrooms with some frozen peas until tender. Add the shredded, cooked chicken and cooked rice. Then stir fry to reheat with soy sauce to flavour. Finish with a little sesame oil. Lovely.....

Thanks Smile I ended up making soup with the few things i had left in the house (rather skint right now), carrots, spring onion, chicken stock, sweetcorn etc. It was delicious apparently, my little girl ate loads!

Will save this thread and try the other ideas next time Smile
