ideas for a ham salad - made with diced ham, large volume, for a buffet

Planning a "big buffet"..... was going to put out platters of sliced ham, and might still do, but was wondering whether an alternative might be a salad with diced, cooked gammon/ham. Guess I could do some sort of pasta salad or maybe cubed ham , tomato and peppers in a vinaigrette. Happy to make something up but wondered if anyone had any tried and tested ideas.
Not with mayonnaise as also doing Coronation Chicken and coleslaw.

thanks Niggle - that does look lovely, and would be a good one to serve partly with ham and partly without for vegetarians. I guess I could make the coleslaw with a vinaigrette instead or re-think the chicken dish.

Hi Hilda, thanks - yes - possibly doing something with rice and tuna, not necessarily in the same dish - and would leave tuna out for vegetarians as some don't eat fish either - but was specifically interested in ideas for salads using cubed cooked ham. Any thoughts?

Waitrose do a really nice ham hock salad with lettuce, pea shoots, peas, new potatoes, radishes, boiled egg, ham, and a mustardy vinaigrette. You could make up something along those lines.
