boring, boring breakfast

I'm very, very bored with my breakfast - can you suggest some ideas for me please? They have to be quick, easy, (fairly) healthy & veggie!

We have cereal most days but have eggs (poached or scrambled), croissants or pancakes for a treat when we have more time at the weekend.

One day a week I don't get time to eat anything at home, and usually have a banana & a cereal bar when I get to work.

For me, porridge is a winter breakfast, so that isn't an option for a few months yet! Grin

I love breakfast!

Here Are some of our faves:
Homemade granola and yoghurt
Fruit salads
Tropical fruits chopped up and am to look beautiful!
Berries on cereal
Yoghurt and berries
Pancakes
Omelettes
Smoked salmon and cream cheese bagels
Pain au chocolat
Mushrooms on toast
Fresh juices

Saying all of that most mornings ds and I have weetabix and oranges!!

Eggy bread (or French toast if you want it to sound more exciting!) I make this quite a lot and it's often quicker to do than making toast or cereAl for everyone.

I quite like fruit toast too.

Mix some smoked salmon in with your scrambled eggs serve with brioche

Oops just saw that about veggie! As a bonus 2 slices of fruit toast counts as one of your five a day!

Veggi kegeree / nasi goereng - make a batch, freeze in one serving tupperware and microwave a tub for breakfast.

Eggs in a basket. Make a hole in a slice of bread, start to fry it and pour an egg into the hole.

Bread (nice crusty) spread with jam/preserves/nutella.

Add cheese and / or chives to your scrambled egg.

Hard boil eggs in advance and have eggs, cheese and bread with some fruit.

I'm a big fan of protein for breakfast. If you don't have time to do eggs then whole grain toast with peanut butter (and apple or banana if you want fruit) is quick.
