Looking for a recipe for a light christmas pud recipe that will keep.

That doesn't make much sense ! I'm looking for a recipe for a light christmas pudding. I would like to be able to keep it for a few weeks at least. Thanks.

Nigella Lawson's "non conformist" christmas pudding from Feast has a lighter texture than ordinary pudding as it has no suet in it. How long does it need to keep for?
