Anyone care to share your fav recipe? I'm going to whip up a carrot cake for DH's return from working away thousand week, I only have light cream cheese - will that still work??

Hi I like the Weight Watchers Carrot and orange cupcakes. Try googling the recipie as I Can't link on my phone. Anyway the icing only works for me when I use philly light. I tried the Lidls equivalent and it's too watery.

I tried using Philadelphia light and it went all watery - had to send DH to the shops to lay in some full fat to get it to work.

Don't know if there is a recipe though that would work with light cheese - maybe I was trying to use light cheese in a full fat recipe iyswim?

I will check my recipe again when I can dig out the hard copy. As I live abroad sometimes our Philly is in odd packing so there's always a chance I used the full fat one by mistake. I know that recipe saves cals too by making individual cakes for portion control and then you only ice around the edge and fill the middle with fruit. (they suggest drained crushed pineapple) I wondered if it'd just work with the light philly & icing sugar, no low fat spread but I've not got round to trying it. I was going to today as I made a fig cake but decided it was better without icing!

Use this one but flavor with orange or lemon extract.

When I say I sent DH to the shops to lay in full fat Philly I mean 'lay in' in the buying sense. Not literally to lie in it. That would be weird Grin
