Best EASY Christmas dishes

My family have decided to have a "pot luck" Christmas dinner this year where everyone brings along a couple of random dishes and at the end we hope we don't have 12 desserts! Consequently I need to make a couple of dishes ahead of time that can either be eaten cold of easily warmed through and still taste good. What are your favourite Christmas dishes?

Eton mess, take ingredients and assemble at the dinner.

Packet hard meringues
whipped cream
yummy raspberies or strawberries (You are NZ right?) and a passion fruit or two

Break up merigues, add fruit and cream and "mess up" This is very delicious and i wish I could eat a big bowl right now - but I can't because my ds is allergic to just about every ingredient. Maybe next year...

Nigella's watermelon and feta salad is very nice and really easy to make. Unfortunately I don't have the right book here so can't copy the recipe but basically I seem to remember you soak red onion in lime juice then add chopped watermelon, cubed feta and a drizzle of olive oil.

buzzybee, another Nigella salad: she suggests snipping up bacon into small pieces and cooking until it goes crispy then draining it on kitchen roll before adding it to a bowl of lettuce, lollo rosso etc. Then squeeze some lemon juice over it and add the bacon fat from the pan too if you want (she suggests cooking salmon fillets in it though), toss and serve. It really is nice (although fattening).

What about a good old greek salad, lollo rosso, cucumber, tomato, black olives, green olives and cubes of feta cheese, all drizzled in olive oil.
