freezing rice - the answer

I had a quick search and couldn't find a link to this but apols if it's been done.

Just saw this advice about freezing/defrosting rice and thought people might find it useful. I have never really dared freeze rice but probably will now.

Put lefover rice in a pot, pot that pot in a larger pot of cold water. Seal and label, freeze. Defrost in fridge, use within 24 hrs, reheat until pipping hot.

I do it all the time - I just put a bit of water in the bottom of the container and microwave until piping hot. Never had any problems. I also freeze leftover pilau and special fried rice from the takeaway - just do the same as with plain boiled rice. None of us have died yet.
It needs to be hot enough to kill the bacillus cereus spores - which is achieved if the rice is put in boiling water for long enough to get hot. The issue with rice is when it is not reheated sufficiently to kill off the spores or when it is kept at a holding temperature in takeaway kitchens
