Can I just hang my head in shame and be the first to admit to totally messing up this cake. Whilst in the oven, the middle of the cake decided to JUMP out onto the bottom of my oven!!! This was bad enough, but being toally thick, I thought I had to pour all of the lemon juice into the cake!!OOPPS didn't realise it needed to be used for the icing. What a domestic goddess I am!! I shall have to try again hopefully with more success.

You know I keep seeing threads on this cake but must be really thick as I haven't seen the recipe!

Please could someone be so kind as to take the time to reprint it or link to the thread that has the recipe on it. Smile

cant do links but I can retype recipe out for you:

MarsonLife's Lemon Drizzle cake OR Heaven Lemon Cake !

170 degrees for 30 mins

9 oz caster sugar
9 oz butter
12 oz self raising flour
4 eggs
3 level teaspoons baking powder
6 tbsp milk
grated rind of 2 lemons
juice lemons separately

Mix sugar and butter and add rest of ingredients together except lemon juice.

Bake in 9 x 11 dish or tin (I used a roasting tin) Line tin with greaseproof paper.

Put in pre-heated oven

while cake baking squeeze lemons.
heat lemon juice for 20 secs in microwave.

Set aside one tablespoon of juice.

When cake comes out of oven, prick it with a fork and drizzle 1 tablespoon of lemon juice into it.

With rest of lemon juice add icing sugar to the consistency that you want and drizzle over cake to form icing.
