What can I do with a butternut squash?

usuallu roast it and serve with pasta but DH says hes bored with that - how else can i cook this veg?

you could make bread with it ala urwotueat..or boil it/roast it and fry up with bacon and onions.. yummy!

I normally wrap it in foil and cook it for about 40 mins ish and serve it as mash.
Sometimes with bacon and onions like jstbcs suggested.

Boil some with some sweet potatoes and a couple of carrots. When soft, pour stock into another container, and mash the remaining veg in pan, while slowly adding water again, until you get a nice thick soupy consistency. Add a bit of curry powder, som milk and some parsley, and you have a yummy soup, that's lovely with some nice fresh wholemeal bread!

Put chunks of butternut squash and onion in the bottom of a roasting tray. Get two chicken breasts (or peppers if you are veggie!) and stuff the chicken breasts with goats cheese or dolcellate. Cook in the oven. The cheese melts and runs out into the butternut squash! YUMMY!

Or,

Jamie Oliver has a delicious recipe called "Hamilton Squash" where you cut a squash in half, scrape out some of the inside to leave a well. Chop the inside bits very small and fry with a red onion, garlic, ground coriandar seeds, small amount of chilli. Then add porcini mushrooms (and half their soaking water), sun dried tomatoes and cook for a few more minutes. Then, mix with uncooked basmati rice and pine nuts. Put the whole lot back into the two halves of the squash. Put the two halves together to make it whole again and wrap it up tightly in tinfoil. Bake in the oven for about an hour and a quarter.

It was absolutely delicious!

bacon and butternut risotto - fry an onion, add a finely chopped squash and a pkt of bacon. fry/soften for a minute or two. Add a mug of rice and a stock cube. Keep adding boiling water until the rice is cooked.

Mash it - half BS + half spuds
Add A bit of nutmeg with seasonign when mash - very nice

SOUP! def soup.

Cut butternut squash into chunks and about 12 carrotts. A large blob of butter. Melt butter in saucepan and pop in squash and carrots. Simmer gently for about 10 mins until they start to soften. Then about 1/2 pint or so of vegetable stock and cover the vegs with it. Simmer gently for about 30 mins. Then get a hand blender and WHIZZ. YUM YUM YUM. One of the most delicious soups I have ever tasted!

I'm cooking one right now, to go with my roast. I've cut it into chunks and boiled them until soft, and I'll be mashing it with salt and pepper and a crushed clove of garlic. Yummy and so healthy.

I made squash and feta rosti the other day and it was yummy,
Just grate the squash and fry it with some onions and corriander and cummin and black pepper when its soft add crumbled feta then fry till crisp then either pop under grill or turn over to do other side cut into quarters and serve with salad or baked beans yum hubbie put tabbasco on his too..
