cut out cookies - best recipe?

I have a great chocolate one from Smitten Kitchen, but would love a plain/vanilla cut out cookie recipe.

I've tried the Martha Stewart one and was not impressed at all.

any recommendations?

I use a 3-2-1 recipe which is great and we use it for cookies for school, brownies and I use it at home.

3 plain flour
2 butter
1 sugar

It is a volume recipe so just use the same containers for each ingredient. We use mini yogurt pots at school and I use a mug at home - all with the same result.

We use this one from the Usborne First Cookbook:

Iced spice biscuits
225g plain flour
125g butter
125g brown sugar
1 small egg, beaten
2tsp of mixed spice
Pinch of salt

For the icing:
125g icing sugar
1-2 tbs hot water
Food colouring

Beat butter and sugar together until fluffy, beat in egg. Sift in the flour, salt and spice. Mix well to make a ball of firm dough. Roll out blah blah blah. 190°C for about 15 mins.

I sometimes omit the spice and add a drop of lemon extract to the icing.
