Nothing yet planned! DOn't want to break the bank or spend ages but would like to impress. Don't usually cook veggie food but like it. Any brilliant ideas for what I can do? Cupboard is practically bare so need to shop... please?

What sort of thing do you like to eat?

JudithOfThePiece · 16/08/2012 13:21

10 is quite a few people! You could try a veggie lasagne as a main course - I do one with a creamy filling of courgette and rocket, which is easy but not very common. If you google Gino D'Campo rocket and courgette cannelloni, you'll get the recipe I use - except I make lasagne cos it's easier than cannelloni!! Serve with salad and a garlic and herb flatbread. Flatbread is very easy to make, too.

Or you could do a curry. If you did a good lentil dahl, a veggie jalfrezi and some sag aloo, you'd only need a bit of rice and some poppadoms. Ooh, and an onion bahji or ten.

Vegetable & chickpea tagine and couscous?

neolara · 16/08/2012 13:25

I would do a curry, dahl, rice, naan.

Veggie lasagne is lovely but may take a surprisingly long time to make as you'll need a lot of veggies for 10 people.

Veggie chilli - I do big chunks of sweet potato and kidney beans, peppers, aubergines and mushrooms. Hate fake meat.

Sides - wedges, rice, nacho chips, guacamole, garlic bread

Pud - Good ice cream pecan pie/sticky toffee pud/Quay Lime Pie/Lemon Meringue pie.

yogabird · 16/08/2012 13:59

Loving the chilli suggestion - thanks to all. Bikemedals... do you use a particular recipe or just make it up as you go along?

Buy guacamole I guess cos only one ripe avocado here - wedges old or new spuds? Then in oven? Coated with anything?

Pecan pie - buy or make...?

What do you think?

Chilli - I just make it up! Was originally a recipe from cook at work, but corrupted along the years into something totally different I suspect. Hugh F-W has a good veggie chilli recipe with pinto beans. Cumin, ginger, garlic, chilli - all essential somehwere along the line. Thick tomatoey sauce. Big spoon of dark cocoa powder.

I hate bought guac, always make it. HFW has a recipe for that too!

Wedges - I do 'em plaim for DH and DS, but serve with salsa.

Pecan pie - buy or make, depending on time.

Why ten veggies?

Anyhow.. Pasta or risotto is always a goodie.
Pasta - make a plain 'red' sauce and add fresh basil and torn up bits of mozzarella last minute. Serve with crunchy salas and garlic bread

Risotto - porcini and peas is yummy

Polenta - cook, cool, slice into pieces and griddle. Bung on a creamy mushroom sauce. Yuuuuuuum

Lasagne - throw in whatever veg you have!

Moussaka - easy and very tasty

Chilli is a great idea - I bung in bulgar wheat too to make it more lumpy.

fajitas? I made some with quorn fake chicken from a pack the othe night (The pack was on special offer in the shops and it was surprisingly nice - Discovery brand I think). It came with the wraps, spice and salsa (which I put in the with the 'chicken' plus some chopped onion and peppers). Nice salad, grated cheese and it was very nice.

Home made curries can be a bit hitty-missy unless you have had a lot of practice.

Frontpaw · 16/08/2012 14:09

And we love a good pud! Chocolate pudding and ice cream!

yogabird · 16/08/2012 14:14

10 veggies cos I thought why not? 2 are officially veggie and all are friends and eating veggie food is tasty and good for us and maybe I should do it more and I can't be faffed with making 2 separate things so they can all eat the same and (hopefully) like it!

Off to google H F-W

Asparagus quiche. Great because your can prepapre ahead reasonably easily and clean up then bung it in the oven when guests arrive. Cheap to make as well and easy to serve.

This is an excellent recipe I just leave out the bacon

Serve with chips and salad

Frontpaw · 16/08/2012 14:30

Please be careful googling HFW. There have been some odd tales about him on here the past few days...

Veggie is great! Have been veggie for 26 years now.

BeehavingBaby · 16/08/2012 14:34

mildredsrecipes.blogspot.co.uk/2010/12/vegan-christmas-recipe-truffled_19.html

This is very very easy and prepable before- would double up and serve with loads of salad and roast new pots if weather very warm or Delia's red cabbage if just normal weather.

JudithOfThePiece · 16/08/2012 17:19

Mmm, that asparagus quiche looks good.

More importantly, where are the threads about HFW? I have googled and found nothing of interest at all!! What am I missing?! Unlike dragon butter, I doubt the answer is on urban dictionary so please enlighten me!

yogabird · 18/08/2012 21:50

Did the chilli and it was fantastic. Not sure on what the HFW stuff is either - anyone?

The thread on Mumsnet about great/awful celebs went 'poof' (probably on the back of Katherine Jenkins gossip).

Sooooo allegedly he 'amused' himself next to not one but two unsuspecting young ladies. One woke up.

I say no more...

I do need a good chilli recipe though... And desert...

JudithOfThePiece · 19/08/2012 21:49

Ewwww!!! HFW!!
