Help me stuff my peppers please...

Fancy stuffed peppers but what to stuff them with? Thought of risotto or cous cous type stuff but sounds a little dry and lacking in zing....anyone?

Tomatoes, anchovies, garlic and spring onions. Few leaves of basil or thyme, S&P and a glug of good olive oil. Lots of crusty bread to mop up the juices.

Agree with all the above, plus some feta or goats cheese...they definitely won't be dry

Hugh fearnley doo dah does nice ones with feta cheese, new potatoes and pesto. They are vair tasty

I got this recipe from Easy Living magazine and it's yum!
2 large peppers, 200g cherry tomatoes halved, 125g feta cheese crumbled, 1 Clive garlic peeled and crushed, 10 basil leaves chopped, 2 tbsp olive oil, 1.5 tsp balsamic vinegar, 3-4 tbsp fresh bread crumbs.

Halve the red peppers, remove stalks and inside bits, blanch them in big pot of boiling water for 2 minutes then pat dry with kitchen roll and lay in baking dish. Mix all the filling together and stuff peppers, sprinkle breadcrumbs on top and bake in oven for 25 mins at 200 degrees, gas mark 6 until golden. Then serve on rice, so good!!! Grin

BTW, these can be prepared in advance (but put bread crumbs on at last minute) and cling filmed up and put I fridge, then get out an hour before baking to let glass dish come back to room temp!!

I stuff mine with beef mince cooked with oregano and garlic , quite dryand add aw tomatoes chopped and mixed with q pinch of sugar ( makes akk the differnce) and topped with mozzarella. i tend to poach my peppers first and then stuff with cooked mixture and heat until cheese melts.

I use green peppers with a bit of mozzarella at the bottom, and then mixture of mince, breadcrumbs, some egg and Parmesan. In red and yellow peppers I put mozzarella, tomatoes, anchovies and capers.

We have stuffed ours with Ainsleys cous couse packet mix, and it is bloody lovely. Even turns out nice on the barbie.

If I'm doing rice or cous cous, I like to put a big spoonful of cream cheese in with it so it's not dry.

Long red peppers are brilliant stuffed with a mixture of finely chopped red onion, mashed feta, oil, lemon juice and herbs.
