baking with artificial sweetener

It's my Dad's birthday next Sunday, he's diabetic and like all diabetics has a sweet tooth. I want to bake him a carrot cake. Has anyone got experience of this, which artificial sweeteners work best in baking?Thanks

Recipe with stevia:

4 medium eggs
150g ground almonds
125g finely grated carrots
50g flour
couple of drops vanilla extract
start with 1tbsp stevia and add more if its not sweet enough

Separate eggs into two bowls, add half stevia to the egg white half to the egg yolks.

Beat the eggwhites to a stiff peak, set a side.

Grate the carrots finely.

Beat the egg yolks until well mixed.

Add the ground nuts, flour and the grated carrots to the egg yolks

Add vanilla and anything else you want like raisins etc

fold the stiff egg white bit by bit into the carrot mixture

fill into a greased cake tin and bake for about half hour at 180c
