Foolproof Sponge Recipe Needed

Hi and thanks in advance.

I need to make foolproof sponge. I'm a good cook but have never baked, I can do any kind of dessert that doesn't involve baking. So looking for an easy recipe and some good tips.

delias always comes out well IMHO.

Top tip - grease and line your tins, and really whisk your sugar and butter together well so it goes pale. Add an egg at a time with a teaspoon of the flour so it doesn't curdle. fold in the rest of the flour. also better to undercook than over cook - I put in a knife and see if it comes out clean. Leave in the tins for 5 mins before turning out.

For measurements, weigh your eggs and add the butter, sugar and flour to the same weight.

I usually use 4 eggs for two 7 inch sandwich tins.

Use really good quality ingredients and don't use old flour!

Agree with CakeBump, weigh the eggs. I use a mixer, whack it all in and mix. Sieve the flour twice makes it very light and airy too.

I used this one in the end and didn't use butter.

I double sieved the flour and weighed the eggs, great tips thanks.

So they are in the oven and I'll let you all know the results later.
