Sandwiches in advance

DS birthday party tomorrow and sandwiches will be on offer! But when should I make them....today then keep in fridge? Or tomorrow?

Food going out at around 2pm tomorrow, would like to do as much in advance as poss.

I wouldn't make them today. Depending on the fillings they will go soggy. Probably best made tomorrow!

If you wrap them well in cling film so no moisture can get in then drier fillings such as ham and cheese (not tuna, anything with cucumber/tomato) should keep (have had to do this for catering jobs). Might reduce the number you have to make tomorrow.

I did ham sandwiches and cheese sandwiches for an afternoon party - I made them in the morning so they wouldn't be all dried up, but made them early so I could chill them in the fridge for a bit before I took them to the party (bit paranoid) Well clingfilmed, I bought a few cheap silver colour platters from the supermarket to put them on.
