Made this today and even DH (courgettaphobe) had seconds.

Serves two:
2 medium courgettes, diced
Olive oil
100 ml cream
1 clove garlic, crushed
2 portions of Boursin
1 egg
1 round goat's cheese (about 80g)

Preheat the oven to 180°C
Sautée the courgettes in the oil until tender (about ten minutes). Meanwhile mix the cream, garlic, Boursin and egg together until even. Put the courgettes into a small oven-proof dish, poor over the cream mixture, cut the cheese into small chunks and sprinkle over the courgettes. Bake for 25 minutes.

Also can be frozen before being baked.

It sounds really nice.
I'll try it at some point.
