Summery recipe for pork chops?

I have a couple of pork chops to cook for dinner tonight and fancy doing something summery but a bit more interesting than just grilled with salad. Any suggestions?

Butter flavoured with sage (fry sage leaves in butter)

Honey and soy sauce

Something with grain mustard and balsamic vinegar would work I think
