Hi everyone,

Looking for some quick (and easy!) dinner recipes, I desperately need some inspiration and hoping you can share your best recipes!

DS is 7 months old and gets seriously grumpy around about the same time I start cooking, so if I can cut down on cooking time that would be great!

Does anyone else fry their gnocchi? It is frikkin awesome and I will never boil it again now! All crispy on the outside and squidgy on the inside, kind of like a savoury toasted marshmallow!

I do, I think the Jamie Oliver gnocci suggests it. I agree I wouldnt boil again

Sorry no time to read whole thread (have to start making dinner! haha!) so sorry if this has already been mentioned but I save time by buying pre chopped frozen veg (such as peppers, onions etc), squirty garlic in a tube, and using cottage cheese mixed with grated cheese (again I buy it already grated) in lasagnes instead of making a proper cheese sauce. HTH.

Stir fries are really quick if you just throw in frozen veg without having to prepare it all, pre-cooked microwave rice or noodles, and some drained tinned beans or pulses, or cooked chopped ham or chicken.

Oh I love the sound of that pasta. DD loves pasta but doesn't like bland cream cheese pasta. I have frozen tomato sauce and pesto for her. Cream and blue cheese sounds like something she will totally eat!

If you have a 3 tier steamer, rice in the bottom layer with water, ginger, lemongrass and garlic, salmon fillets in the middle layer and veg on top. Stick on the hob for about 20 mins. I love making this as can prepare when DD is happy then later on just stick on the hob and don't have to do anything except watch the temperature.

Tuna & Anchovy Pasta - in 3 tbsps olive oil, fry 2 chopped cloves of garlic, 1 birds eye chilli, 1 red onion, when golden, add tin of tuna, tin of anchovies, juice of half a lemon, glass of white wine. Simmer until ingredients become more of a sauce and throw in your cooked pasta. Prawns added also work.

Sausage Pasta - took inspiration for this one from Abruzzo, where we spend our hols - in 1tbsp olive oil, add chopped garlic (I use 4 cloves, we like our garlic!), onion and fry until golden, chop up some good quality meaty sausages into bite-size chunks and add to pan, when browned, add rosemary or oregano or paprika and passata. I also add a couple of splashes of red wine if I have some.

Chili con carne: fry chopped onion in oil add mince fry unti brown. Add 1 tin of chopped tomatoes and 1 tin of kidney beans in chili sauce. Cook until everything is bubbling. Serve with microwave rice or jacket potatoes and grated chees.

Fried, so I only occassionally make this for DD... breadcrumbs with sage pre made and frozen

chicken breast, bashed flat
Chop sage, add to bread crumbs
Dip chicken in flour, egg, breadcrumbs
Fry for a few minutes each side

Another favourite...
Chicken bashed flat
Spread with Garlic roule or another soft cheese
layer on parma ham (or something similar)
Roll up in foil like a cracker
Cook for 25 mins

I realise this is longer than 15 mins, but I freeze them un cooked in the foil, defrost in the fridge during the day then pop in the oven. No prep needed, serve with salad?

I batch cook at weekend and freeze meals so on nights I don't have time to cook all I have to do is reheat and cook pasta or rice to accompany if needed. I get one out of the freezer the night before and leave in the fridge to defrost.

Bolognaise, chilli, lasagne, cottage pie are staples.

One of my new quick meals is chinese rice. Adapted from a slimming world recipe. Cook rice. In another pan cook chicken diced into small pieces. i add chilli flakes and seasoning. Add chinese cabbage or any other veg. Mix in rice and 3 or 4 beaten eggs. Serve with soy sauce.

pesto pasta with runner beans
boil pasta and steam beans over pasta (can add new pots to pasta if wanted)
add pesto - home made nicest - blitz parmesan, basil, parsely pine nuts and garlic whilst pasta cooking

Shamelessly nicked from a supermarket magazine, but DH and I tried this the other night and it was yum!

  • Pop naan breads under the grill
  • Mix a pot of yoghurt, some grated cucumber and a few spoonfuls of mango chutney.
  • Chuck in some cooked chicken (we used the chicken tikka prepacked stuff, extra yum) and mix to coat the chicken.
  • Serve on the warm naan.

Really tasty and so ridiculously quick.

Homemade pizza using a wholemeal or plain naan bread. So quick, just cover naan with pasta sauce, then veggies and grated cheese. Dead simple!
