Menu help needed please- main ingredient: Rack of lamb!

For my husbands birthday meal I have bought him a rack of lamb.

I want to make him a fancy 3 course meal. Please design me a menu to go with the rack of lamb :)

Since lamb is quite rich I'd sandwich it between lighter, sharper flavours for starter and dessert. Seared scallops with a lime and chilli dressing to begin with, for example. A cinnamon ice-cream with chocolate-dipped ginger thins and ginger wine for dessertt.

We're having rack of lamb tonight, with roasted baby on the vine tomatoes and saute potatoes with rosemary and garlic. Scallops are a good suggestion, we had those last night, yum!

Infact, i like both of cognito's suggestions, you can't go wrong with those, only other dessert would be a chilled lemon souffle.
