My lunch today will be: Cherry tomatoes, basil, shallots, garlic, anchovies, olive oil and lemon juice. Yum!

Tomato Mozzarella Salad
--------

Ingredients

* 3 large tomatoes, sliced
* 8 ounces mozzarella cheese, sliced
* 1/4 cup olive oil
* 1/4 cup balsamic vinegar
* 1/4 teaspoon salt
* 1/8 teaspoon ground black pepper
* 1/4 cup minced fresh basil

Directions

  1. Place tomato slices, alternating with mozzarella slices, on a large serving platter.

  2. Combine oil, balsamic vinegar, salt, and pepper in a jar with a tight-fitting lid; shake well. Drizzle over tomatoes and mozzarella; sprinkle with basil.

oooh I do that dressing, but use it with tomatoes and red onions. I will add some mozzarella to it next time. It is my favourite dressing with tomatoes.

Crispy bacon, sautéed potatoes, cherry tomatoes, sliced onions and lettuce dressed with a simple balsamic and olive oil vinaigrette.

Tex mex salad:

Sautéed chicken with tex mex seasoning (cumin, paprika, powdered onion etc)
Prawns cooked in the same pan as the chicken
Avocado
Kidney beans
Lettuce, tomatoes and onion
Simple light vinaigrette
One pickled chili pepper, sliced

Last one, fabulous salade Nicoise:

Hard boiled eggs
Boiled new potatoes
Steamed French beans
A can of tuna
Lettuce

For the dressing: slice up a handful of pitted black olives. Add salt and pepper to the juice of one lemon, add a crushed clove of garlic, plenty of fresh thyme, a tsp of vinegar (cider or wine)and a tsp of mustard. Drizzle in olive oil whilst stirring. When it tastes nice (Nice ), add the olives and leave to stand for ten mins.
