I make butternut squash risotto. Just fry up some onion in olive oil and a bit of butter. Add the cut up butternut squash and risotto rice. Fry for a couple of minutes. Then add a bit of white wine. Then start adding either vegetable or chicken stock a bit at a time. Once cooked, add some paramsan shavings then serve with a bit of basil olive on top. Tis yummy but very rich and filling.

Spinach and mushroom risotto is lush but I don't use a recipe. Saute onion; add mushrooms; start adding risotto rice; keep stiring; add stock inc white wine; gradually add the rice & stock; keep stiring until cooked and serve with parmasan. Mmm... may have that tonight now :)

Onion, fennel and petits pois with bits of scrambled egg for protein.
Or onion and red pepper.

onion and garlic and red pepper, then when nearly cooked add asparagus and large prawns.....fab! serve with fressh coriander and lemon/olive oli drizzled over.
am already salivating!

Smoked Haddock and green pea

Heat olive oilo, fry chopped up garlic, add risotto rice and stir, add some white wine and veg stock etc, in the last 10 minutes or so, add some cubed undyed smoked haddock and in final minutes, add frozen green peas.

If you like it richer - add some cream at the end of cooking.

My Fav is lambs liver risotto cheap, tasty, extremely healthy and very nutritous. Ing - Carrots, garlic, onions, ordinary rice, chicken stock, seasoning, thyme and lambs liver.
Prep ingedients as for any rissoto, except fry the liver seperately chopped accordingly. And add about 5 mins nearing the end. If u have permesan cheese wak it on and FIN. Enjoy!

there are quite a few in the current Sainsbury's magazine I noticed. I just bung anything in - leek and green pepper is a bit of a fave at the moment
