I like good old avocado, bacon, mayo and lettuce
Hoummous and chargrilled red pepper/aubergine is DH’s fav
the girls love cream cheese and roasted cherry toms

Acutally, my all time favourite is creamy goats cheese and red onions (caramelised with balsamic vingegar, butter, red wine and al ittle sugar, cooked slowly for two hours - I do a massive batch and keep in fridge like a "jam"). On warm ciabatta or fresh walnut bread with baby spinach...aaaah. The pure white, dark sticky onion and bright green is heavenly.

Used to be vegan and then veggie so i like the following

On a lfatbread add humous and smother the base then add watercress and/or rocket and roasted peppers and roll up, really good.

Or

Chickpea balls/flats like burger shape with humous and veg and salsa

Still like the above but also eat tuna with peppers, sweetcorn, diced little veg and a small amount of salad cream and pepper

Peanut butter and banana
Cheddar cheese, gherkin and mustard (north american mustard not english!)
or how about bagels?
I love veggie cream cheese on a sesame bagel.
just grat up a bunch of veg (carrot, cucumber, cougette) add chopped spring onion and red pepper.
and spread thickly on a bagel...mmmm

M&S used to do a lovely cream cheese and apple filling, which they've unfortunately stopped doing, but I absolutely loved it.

Dh sometimes makes one with coleslaw, humus and grapes - obviously wouldn't be to everyone's taste.

grated cheese, onion and salad cream is yummy!!

sunblushed tomatoe and feta cheese nice too.
